Ingredients
Honey: 1 cup
Water: 1 cup
Golden syrup: 1 tbsp
Butter: 30 grams
Chopped dates: 1 ½ cups
Chopped walnuts: 1 cup
Chopped almonds: ½ cup
Wholemeal self-rising flour: 2 ¼ cups (1 cup wheat flour+1 ¼ cups maida)
Ground ginger: 1 tsp
Mixed spices: ½ tsp (nutmeg-cinnamon powder)
Method
To make golden syrup, heat one cup sugar in a non-stick pan on low flame. Do not stir it. When it becomes dark brown in colour, add half a cup of boiling water into it. Turn off the flame. Keep stirring until the paste is smooth. Combine honey, water, butter, and golden syrup in a saucepan stirring constantly on low flame until the butter melts. Do not boil it. Remove from heat. Cool to room temperature. Stir dates, walnuts, and almonds into the honey mixture. Stir until combined. Add ground ginger and mixed spices. Mix well. Grease a deep 19-centimetre square pan. Line base with butter paper. Pour mixture into the prepared pan. Bake on the moderate temperature in a pre-heated oven for 50 to 60 minutes.
After 50 minutes, turn off the oven and insert a knife in the center of the cake. If the knife comes out clean, then the cake is baked. Otherwise, bake it for few a more minutes and check with the knife again. Turn off the oven after the cake is done. After five minutes transfer the cake on a wire rack. Let the cake cool on the wire rack. The cake is ready to cut and serve.
